This quick and easy meal delivers great Spanish flavours. Combine with other tapas dishes (such as roast pepper and chroizo) for a larger spread.
- Eggs (4)
- Red onion
- Salt and pepper
- Cut the potatoes up into small chunks, parboil them and then fry them for 20 minutes
- Add the red onion, chopped rosemary, garlic and seasoning. Fry for 10 minutes
- Crack the eggs into a pan, beat well, season, then pour over the potato/onion mix
- When the egg looks set, grate some cheese over the tortilla, cut into wedges and serve
