Make this easy recipe when tomatoes are at their ripest. Using tomatoes of different types and colours adds more interest, colour and flavour. This recipe also uses red onion and coriander. Add chili if you like it hot.
- Red onion
- Basil or coriander
- Oil, vinegar, seasoning
- Chili (optional)
1. Roughly chop the tomatoes, onion, herbs and chili.
2. Blitz everything in a food processor. Season. Simple as that!
