This is an unusual, very healthy and protein-filled recipe to try for breakfast/brunch/lunch, or whenever you fancy.
Ingredients
- Quinoa
- Black beans
- Egg (1)
- Vegetables to garnish: Sliced avocado, tomatoes, spring onion
- Seasoning: coriander and/or mint, chilis or jalapenos soaked in a little vinegar, lime or lemon
Method
- Boil the quinoa as per packet instructions (usually about 15 minutes)
- Drain the black beans and fry in a little oil for 5 minutes until crispy
- Season the quinoa with a little oil, lemon juice, salt and pepper
- Fry the egg
- Lay out the quinoa, beans and egg on a plate
- Add the vegetables and seasonings
