oat pulp cookies

Ingredients:
  • Oat pulp (2 cups)
  • Dried fruit of your choice (raisons, dates, prunes, etc.) (1 cup)
  • Apple or banana
  • Peanut butter (or other nut butter) (1-2 tbsp)
  • Seeds and nuts
  • Seasoning: cinnamon, pinch of salt, ginger
  • Optional: cacao nibs

Method:

Blend all the ingredients up until they form a dough. 
Shape into small cookie-shaped balls
Cook at a low temperature (around 140 fan) for 30-40 minutes

  • Oat pulp (1 cup)
  • Flour (1 cup) – experiment with less)
  • For sweetness: a little sugar or honey (or a healthy alternative), some sweet fruit, such as bananas, pineapple or raisons
  • Olive oil or coconut oil (4 tbsp)
  • You can also experiment with other things: seeds, nuts, desiccated coconut, cinnamon…
Combine all ingredients. Put dough into a baking dish. Cook at 200 degrees for 20-25 minutes
