A great healthy alternative to potato mash, this mix of greens is surprisingly thick, creamy and indulgent-tasting.
Ingredients
- Broccoli (approx. 4 spears)
- Frozen peas (100g)
- A handful of mint
- Salt, pepper and olive oil
Method:
Boil the broccoli for around 7 minutes. Leave to cool, then place in a blender along with the peas, mint and seasoning.
Blend up into a thick puree. You can try adding a few capers for an extra punch. It's great served with fish and chips!
