We had some leftover apples that needed using, so I made an apple and berry cobbler – perfect for warming up in this miserable January weather!
Cooking apples (750g)
Selection of berries, or plums also work well (300g)
Caster sugar (100g) (plus a little extra to sprinkle on the fruit)
Cinammon (2 tsp)
Milk (6-8 tbsp)
Walnut pieces (optional)
Fruit: Peel, core and slice apples. Cook the apples gently for 5 minutes along with a little water. Add the berries. Sprinkle over a little sugar. Cook for a further 5 minutes. Put the fruit in a baking dish.
Batter: Combine flour, cinnamon, butter, sugar, eggs and milk, Mix well to form a soft batter
Assemble: Simply drop the batter on top of the fruit. Leave little gaps on top to allow the fruit to peak through. Sprinkle with a little sugar and walnut pieces if using.
Cook at 160 (fan) for 25-30 minutes
