This satay sauce is super quick to make and tastes unbelievable when coated on chicken and barbecued. Satay can also be used for things other than chicken. It's great over noodles and stir fried veg, in particular.

1. Satay sauce
2. Marinade the chicken in half of the satay sauce for a couple of hours (or overnight for a more intense flavour)
3. Fry the chicken until almost cooked
4. Assemble

- Diced chicken breast
- Peanut butter (3 tbsp)
- Soy sauce (1 tbsp)
- Chili powder (1 tsp)
- Few leaves of coriander
- 1 lime
- 2 cloves of garlic
- Small piece of ginger
Method
1. Satay sauce
- Grate the ginger, garlic and lime zest into a bowl
- Add the peanut butter, soy sauce and juice of half a lime
- Finely chop and add the coriander
- Mix well. Add a drop of water if the consistency is too thick (or a little sesame oil and rice wine vinegar)
2. Marinade the chicken in half of the satay sauce for a couple of hours (or overnight for a more intense flavour)
3. Fry the chicken until almost cooked
4. Assemble
- Put the chicken pieces on skewers
- Coat the chicken skewers with more marinade. Leave some of the sauce for dipping at table if you want
- Put them under the grill for a few minutes until crisp
